One of our staples imported from Australia is the humble carrot. Long known for it’s health benefits the question is, “How to eat it for best results?”. If you eat it raw, the best form is juiced, as this breaks down the cell wall structure and releases the goodness. Interestingly if you eat it cooked, it is best boiled whole and then sliced, according to recent research by Dr. Kirsten Brandt & Ahlam Rashed of the University of Newcastle. This method retains 25% more of the water soluble anti-cancer compound falcarinol for example, than if you chop it first!

We are also famous for our organic Asian leafy greens brought in daily from our organic farms in Malaysia. Our Siew Pak Choy, TC Pak Coy, Sweet Choy Sum & HK Choy Sum have lower levels of oxalic acid than spinach and silver beet but still offer high fibre, beta-carotene & vitamin B & C. Again, the speed of the stir-fry method or a quick blanch will retain more of the water soluble antioxidants.
